I spent an afternoon last week looking for some new side dish recipes. I just get tired of making the same few things every once in a while. Every time I do this, we try quite a few dishes that we don’t like all that much and we find one real keeper. This go around the Italian Beans and Rice recipe was a definite keeper. I loved how easy it was to put together and my family just gobbled it up. It’s definitely going to be a regular on our dinner menu from now on. I think next time I’ll add some cooked chicken to it and turn it into a filling main dish. I bet that would be yummy.

I’m usually not a big fan of bean recipes. They take forever to cook and my kids don’t usually like to eat them, unless they are refried beans in a burrito. Of course I realize that they are pretty healthy and economical, but neither will do you much good if your family doesn’t eat them. I’m just happy I found another dish to add to my cooking arsenal. Maybe I’ll try a Cajun style bean and rice dish next and see how they like it.
